Easy Bok Choy Salad
with Asian Vinaigrette |
Dressing

1/2 cup water |

1/4 cup maple syrup |

Juice of 1 lemon |

3 Tbs soy sauce |

1/3 cup extra virgin olive oil |

Salad
| • |
1 medium to large head bok choy, cut into bite-sized pieces |

1 bunch green onions, chopped |
| • |
1/2 cup slivered almonds |
| • |
5-ounces of chow mein noodles |
Instructions
Combine the water and maple syrup in a saucepan. Bring to a boil, reduce heat, and cook 3 minutes, stirring constantly. Remove from heat and add the lemon juice, soy sauce and oil. Cool. Keep in the refrigerator until ready to dress salad. In a large bowl, combine the bok choy, green onions, almonds and chow mein noodles. Toss with dressing and serve immediately. Serves 4. |
