| Grilled Bruschetta Sandwiches |
Ingredients

4 slices of focaccia bread or 2 paninis, cut in half |
| • |
1 clove of garlic cut in half |
| • |
2 tablespoons of extra virgin olive oil |
| • |
¼ cup red lentil hummus or regular hummus |
| • |
1 to 2 medium ripe tomatoes |
| • |
¾ cup Gorgonzola cheese or Camembert or Brie cheese, mashed |

Instructions
Rub the slices of bread or Panini halves with garlic. Drizzle olive over bread and place the bread in a large heavy skillet until golden. Remove onto a large plate and top with the hummus, tomatoes and cheese. Place the other half of the bread on top and pack this sandwich closely so that the ingredients stay together. Put in the refrigerator and enjoy cold the next day. Makes 2 bruschetta sandwiches.
